Bell Peppers Stuffed with Chickpeas Couscous

A simple recipe to combine legumes and vegetables, one of the healthiest foods you can eat. Only a handful of ingredients and 20 minutes are needed to prepare it.

Legumes and vegetables are one of the best foods you can eat. Here you will learn about how to prepare stuffed peppers with couscous made out of chickpeas. Simple and healthy that takes about 20 minutes to make it.

Start by grabbing a pan or a pot and pouring the couscous in it. I use couscous made of chickpeas and for 150 grams of it I added about half liter of water. Let it cook on low heat until all the water is soaked up, which should not take more than 15 minutes.

While the couscous is cooking wash the peppers, cut them in half and remove the seeds from them.

Wait until the couscous is ready. I like to add some kind of spicing to it, this time I chose basil that I sprinkled over it.

Now it is time to stuff the peppers with the couscous. A teaspoon will be your best bet for this. This process takes less than a minute.

The Dish of Stuffed Peppers with Chickpeas Couscous

Most traditional recipes would call for further cooking so the peppers are cooked, too. Not this time, I prefer the fresh taste of the vegetables combined with the cooked couscous.

To finish off add some tomatoes for decoration — and to increase the amount of vegetables you eat.
